Mummy’s Tropical Fruit Salad

By Chioma

Children can be funny when you give them salad, whether fruit or vegetable option. It may be hard getting your fussy eater to enjoy some of these healthy options, however one of the ways to get them is adding something they like in it.

I remember my mum (that’s where the name came from) making this fruit salad for us then and how we looked forward to it, unlike having to eat the fruits plain or just individually. Mummy’s fruit salad recipe here combines our easy to find fruits with the delicious taste of evaporated milk and more added twist from me.

Mummy’s Fruit Salad Recipe

Ingredients:

  • Banana
  • Pineapple
  • Orange or tangerine
  • Mango
  • 1 tin evaporated milk
  • Honey
  • Nutmeg or Cinnamon spices
  • Fresh mint leaves (very optional)

*No quantities are indicated, as it would be better to mix the ratios to your child’s preference…just ensure you add a mix of all the fruits. You can also add other fruits you may have if they like it.

Method:

  1. Cut, peel the pineapple and cut into small chunks. Do same with the mango and banana, then dice into cubes.
  2. Peel the orange, remove the fibrous film if you want, then also deseed, cut and add to the other fruits. Toss together, cover and put in the fridge to chill for sometime.
  3. Combine some of the evaporated with a teaspoon or two of honey and a pinch or two of the spices.
  4. Remove fruit from fridge and pour the milk mix into the bowl. Toss well and serve.
