Savoury beans and oats pancake makes a welcome addition to the pancake varieties that are given to babies and kids. It is also different because it is not overly sweet but still delicious in its own taste.

This pancake is made with a combination of beans flour and oats flour among others. Beans is a protein-rich Nigerian staple that is used to make different foods, and combining it with oats raises the nutrition of the pancake you are offering your baby. This pancake can be quite filling and can be made to be soft or a bit crispier according to taste, however the softer version is always better for baby.

You can add some vegetables like grated carrots or chopped ugu and spinach to this pancake too. Find more pancake recipes.

Savoury Beans and Oats Pancake Recipe

Ingredients

  • 2-3tbsp oats flour
  • 11/2 tbsp beans flour
  • 1 small egg
  • 1tsp crayfish
  • 2-3 tbsps water or milk (you can dilute powdered milk in water and it is ok to use normal milk when cooking baby’s food)
  • 1 or 2 tsp oil or butter
  • Oil for frying

Method

  1. Break egg into a bowl, add the milk and whisk well.
  2. Add the other ingredients and mix together. Add more milk or water to make it lighter if it is too thick.
  3. Add oil to cover the base of your pan and once hot scoop in and fry the pancake mix. Flip to cook the other side too.
