Making Plantain and Cornmeal Moi-Moi is another way to use up your ripe plantain. The sweetcorn added to it gives more sweetness and bite to this savoury muffin. These muffins can make a good breakfast or dinner, and can also serve as a lunchbox school meal for the kids. It will go well with pap, porridge and can as well be eaten alone either as a snack meal or as a finger food for weaning babies and toddlers. It is therefore an acceptable kid-friendly meal.
As i said in an earlier post, cornmeal is a readily and cheaply available food that Nigerian mums can take advantage of, by making a variety of meals for the kids with it. One of the aims of this blog is to share food ideas that can be easily created by mums anywhere using normal, everyday ingredients. The cornmeal porridge is suitable from babies to adults and the crispy yam bites is another recipe that has cornmeal that you will love to try, if you haven’t already.
Plantain and Cornmeal Moi-moi Recipe
Ingredients: (makes about 6 muffins)
- 1 cup Cornmeal
- 1 very ripe or over ripe Plantain
- 1 medium tin Sweetcorn (optional if making for baby or toddler to avoid choking)
- 2 tbsp ground Crayfish
- 1 medium Onion
- 1 egg
- 1 Seasoning cube
- Small chunk Ginger
- 1 tbsp Palm oil or Vegetable oil
- Salt and pepper to taste
- 2 cups warm water
Method:
- Blend plantain with the onions, ginger, egg, pepper and a cup of water until smooth.
- Pour into a bowl, add the cornmeal and stir to combine well. Add the remaining ingredients and water to get a smooth mixture.
- Pour into foil plates and steam for about 35 minutes or till its firm and done. Alternatively, bake in muffin cups in a preheated (180 degrees celsius) oven till a toothpick inserted in it comes out clean.
- Serve either alone, with pap, porridge or with stew.
