Social media has really made the world a global village, so much so that you don’t feel left out in a lot of things happening elsewhere. Communication and interaction has become so easy that you actually forget you haven’t seen someone for almost 10+ years, and still don’t even feel the absence. I was so amazed to hear one of my friend’s voice recently because our gist has always been on Facebook or Whatsapp. I was like “oh my God, I’ve actually forgotten how you talk until I heard this”
Nigeria celebrated her 55th independence anniversary on 1st October and Nigerians all over the world participated especially by making green and white themed food. I saw a lot of creativity with food that made me proud to be a Naija girl, talk of a map of Nigeria sculpted eba and cake made with food, the Nigerian Flag eba, cake, rice etc…a proud display in honour of our heritage.
This girl here was too lazy to cook but a request for ice lollies from my daughter got me thinking. In the afternoon, as I was about boiling rice to eat with stew, another thought struck. She would never touch avocado with a stick fork, but she finished this without a fuss. I added tomato stew to actually hide the green from her and you can do same if you have ‘green haters’ in the house.
So, here’s two very simple recipes for you. We all know how nutritious our ugu is and avocado is one unique healthy fat fruit that you can read all the benefits here.
Avocado Rice and Ugu Yoghurt Ice Lollies Recipe
For the Rice
Ingredients
- 11/2 cups rice
- 1 small tin coconut milk
- Chicken or Beef Stock for cooking
- 1 Seasoning cube or powder
- 1 small avocado
- Salt and pepper to taste
- lemon or lime
Method
- Parboil rice, wash and drain. Set a pot on fire adding your stock to boil. Remember to strain the stock first to remove food particles, so it would be clear.
- Once stock boils, add the coconut water and seasonings, check for taste and then add the rice to cook till done.
- Cut and scoop out some avocado into a bowl and mash well with a small squeeze of lemon or lime. It helps the avocado retain its colour. Scoop some rice and mix into the avocado. Serve plain if you like as the rice is already tasty or with stew.
For the Ice Lollies
Ingredients
- Natural unsweetened Yoghurt
- Small bunch of ugu leaves – you can also use spinach or kale
- Banana
- Honey or sugar
You also need ice moulds to freeze it in. You can improvise with used yoghurt pot and ice cream sticks or use the ice block tray and wooden skewers (the one used for kebabs)
Method
- Put yoghurt in a blender with honey and banana. Blend with a little water till smooth and pour into your ice mould.
- Blend ugu with a little water and strain out the juice. You can squeeze too instead of blending. Put back the liquid in the blender and add some banana and honey to your taste. Blend till smooth and pour into ice moulds too.
- Put in the freezer for at least 4 hours to form ice moulds.
