I have a peanut butter (PB) or all nuts lover in the house. Unfortunately, nuts are a no-no in her school as they operate a ‘no nuts’ food policy, so it is restricted to home meals.
This is one breakfast that is thoroughly enjoyed by the whole family. I used honey instead of sugar to sweeten and then the banana too adds to the delicious sweetness.
These Pancakes are just perfect and the right size for their school snacks or lunch (if nuts are allowed in the school). If your child has allergies, then use only banana, which as well is very delicious just alone in pancakes.
Smooth or Crunchy Peanut Butter? Your preference or your child’s is up to you. You can make yours too and we also have our peanut butters locally sold in markets and used to eat garden egg…Ose-Oji or Okwa-Ose as it is called in Igbo.
Peanut Butter and Banana Pancakes Recipe
Ingredients:
- 1 ¼ cup flour
- 1 tsp baking powder
- 3 tbsp melted peanut butter
- 1 medium ripe banana
- 1 egg
- 2 tbsp honey – add more to your preference or use sugar
- ½ cup milk
- 1 tsp vanilla essence flavour
- Oil spray for cooking
Method:
- Sift flour and baking powder into a bowl. Mash banana till smooth. Whisk egg and combine with the milk, vanilla flavour, mashed banana and honey. Alternatively, you can chop the banana into a blender and blend with milk, honey, egg and vanilla.
- Combine the flour with the mixture above, add the peanut butter and gently mix together until it is thoroughly combined. Add more milk if you want a lighter consistency for your pancake batter.
- Put a pan on low to medium heat and slightly spray or grease with oil. Scoop batter into the pan and cook until bubbles start appearing on top. Flip the other to cook for a few minutes.
- Serve with more bananas or fruits. Make it a sandwich for the kids by mixing PB and honey, spread on one pancake and cover with another one.
