An empty tin of jumbo oats…a full tin of Ijebu garri and the desire to take granola that fateful night gave birth to my ‘garrinola. I felt silly applying the technique I used in making my homemade granola but the end result had me smiling.
Drinking garri, with fruits and nuts, had never felt this awesome and filling. I doubt if my father would have banned it if he had caught us drinking garri like this. It was a taboo then to drink garri as kids and we made sure my parents were not around before indulging ourselves.
Garrinola is filled with nuts and added fresh fruits that makes it quite healthy. These additions make it very filling with the minimal garri grains and more fruits which is quite good even for kids. You can take Garrinola with yogurt or with warm milk, as well as eat as a snack too. I stored the Garrinola for one week in my cereal container before it finished up.
Nigerian Ijebu Garri Granola- Garrinola Recipe
Ingredients:
- 1 cup garri – I used ijebu, the one that is sour in the mouth
- 2 tablespoons olive or vegetable oil
- 3 tablespoons honey
- 2 teaspoons vanilla flavour
- 1/2 cup raisins
- Your choice of nuts, fruits and seeds – almonds, groundnuts, cashew nuts, raisins, walnuts, sunflower seeds, sesame seeds, pumpkin seeds, sultanas, dried apple, pineapple, banana etc.
Method:
- Pre heat oven at 150°C.
- Put garri in a bowl. Add the oil, honey and vanilla to it, then combine together.
- Spread on a lined baking tray and put in the oven to bake. I added my sesame and pumpkin seeds to toast with it. Open the oven intermittently to stir and re-distribute it, to avoid them getting burnt. You can reduce the oven if it is too hot.
- Bake for about 15 minutes or until it turns a bit golden brown. Bring out and leave to cool. It may not be completely dry but it will once cooled. If you leave it in the oven to dry completely, it will become rock hard once cooled, you may only have to enjoy it by adding warm or hot water.
- Add the nuts and seeds to it and combine well. If you have dried fruits, you can add it at this stage too, if you don’t want to add fresh fruits.

Innovative. Yum looking. Will give this a try. But y not roast the nuts with it to bring it all together. I make similar without the garri. The garri should add another dimension.
