This Fish and Ugu Creamy Spaghetti comes in handy as a healthy and satisfying homemade lunch or dinner for your baby from around 8 months. It contains Ugu, our nutrient rich Nigerian vegetable plus the added proteins, giving it a good taste that surely beats the blandness of store-bought baby food.
Knowing what your baby is eating is very important and making it yourself is another experience. Remember that not all babies are the same. Fish and Ugu Creamy Spaghetti
Ingredients:
- Pasta of any kind ( I used wholemeal spaghetti)
- Mackerel Fish (cooked or grilled and very well deboned)
- A little chopped onions
- Whole Milk (mix powdered one in water according to packet instructions)
- A few leaves of Ugu (substitute with green or spinach)
- Tsp of vegetable or olive oil
- Water for cooking
Method:
- Cook spaghetti in boiling water till soft. Drain and set aside.
- If your fish is uncooked, then put in a pot with onions and garlic to cook for about 10-15 minutes. Allow to cool before removing the bones.
- Put a clean dry pot on medium heat with the oil. Add the chopped onions and fry for a while. Add a tablespoon of water and the fish, then allow to simmer for about a minute or till the water is about to dry up.
- Pour the milk into the pot and add the pasta. Allow to boil, then add the ugu leaves and simmer for a minute before bringing down.
- Use a hand blender and purée to a chunky consistency before serving baby.

Oh wow! This is a beautiful concept. My 8 month old daughter doesn’t really like baby food and would cry for adult food. She practically dig in for jollof rice! So this blog is really way to go for me! Well done!

Thanks so much Ugochi. I try to give measurements but i sometimes leave it out especially on meals i feel mums can eyeball, use their discretion and still get a good or even better tasting dish than mine.
