This ‘village girl’ refused to eat her mash the first time she was served at a restaurant, and that was a creamy irish potato mash that came with my order. I finished what was on my plate and left the mash…how can a grown adult be eating mashed food when all my teeth are still intact, i queried myself.
I have come to love mash now after i was cajoled to taste it and this sweet potato and carrot mash is one yum yum dish. It is a great meal for the whole family, from the baby who is being weaned up to you. You don’t require much to bring out the flavour in sweet potato because it is already sweet on its own.
If you are making this for baby, this is where your homemade vegetable baby purée comes in handy. All you need do is boil or roast your potato, mash it up, then mix with the carrot purée and your nutritious baby food is ready. You may want to boil the potatoes in baby’s milk rather than water and as well add some fish for more nutrition.
I roasted my sweet potato and carrots instead of boiling this time because I like the enhanced flavour that comes with roasting. If your oven is not available, just cut up and boil the potatoes and carrots in a little quantity of water. The texture of your mash is up to to you. For baby, completely mash everything to a purée and for older babies that are up to 9 months, little lumps to chew on is not a bad idea as the potato is already soft. Also, the consistency can be made to your liking by adding little or no liquid for a firm mash or adding more liquid to make it softer.
Sweet Potato & Carrot Mash Recipe
Ingredients:
- 1 medium tuber of sweet potato
- 2 medium carrots
- Cooked or grilled fish – optional
- 1 tablespoon Thyme and all purpose seasoning
- 2-3 cloves of garlic
- A knob of butter – if boiling the potatoes
- 1 tablespoon of vegetable oil – if roasting in the oven
Method:
- Wash and cut the potatoes into small sizeable chunks. You need not bother peeling the back as you can remove it after boiling or roasting if you like. Also peel the carrots and chop into two by slitting the middle first to enable it cook well.
- If you are boiling, put the potatoes and carrots in a pot with a small quantity of water or milk, add the thyme, seasoning and garlic. Cook till both are well done and soft.
- If you are roasting in the oven, put the potatoes and carrots in a bowl, add the thyme, spice, garlic and vegetable oil. Toss till they are well combined. Line an oven tray and pour the contents of the bowl in it. Bake for 20 – 30 minutes or until they are soft at 200 degrees Celsius oven temperature.
- Mash the carrot and potatoes in a deep bowl or pot with your masher. If you used the boiling method, drain and reserve the liquid first before mashing and add the butter too. You can add the liquid if you want to loosen the consistency especially for baby purée.
- Flake the fish and add to the mash before serving.
