This sardine-in-egg sandwich is one that you can actually close your eyes and whip up in seconds.
Sardines are one of the highly nutritious fishes for growing children (read why here). I also have a chart showing the nutrition that are derived from egg, though emphasis was more on the yolk, which is the main ‘koko’ as far as eating egg is concerned.

Sardine has its peculiar taste and sweetness that you can eat it alone without adding any spice. However, it is up to you to add some pepper, onions and other types of seasoning. Sometimes, i do add them but I prefer to leave it plain for my little ones or top with vegetables (cucumber, tomatoes and lettuce) or cheese when she feels up to them.
Sardine-in-Egg Sandwich Recipe
Ingredients:
- Sliced bread
- 1 tin sardine
- 2 medium eggs
- 1/4 chopped onions – optional
- Seasoning – optional
- 1 tbsp oil for frying
Method:
- Open sardine and drain off the water. If using sardine in oil, then drain the oil into a separate bowl. Mash the sardine in another bowl and mix with onions and seasoning if you want to.
- Break egg int a bowl and whisk well. Pour into the sardine and combine together.
- Put oil in a frying pan, just to coat the base of the pan. Set on medium heat and once hot, pour in the sardine and egg mixture to cook for about a minute. Flip the other side to cook as well and transfer to a plate.
- Cut egg and arrange on buttered slices of bread, top up with other veggies if you like, cover with other slices and cut into desired shape.
