Adding ripe plantain to baby puree gives it a better taste and is as well a nutritious meal that you can add to your baby weaning meals. Ripe plantain is a much loved food in Nigeria by kids and adults alike, so why not introduce baby to its taste early too.
Ripe Plantain contains a good amount of Vitamin C which plays a major role in the formation of bones and teeth. It also contains Vitamin A, as well as other essential vitamins and minerals. In addition, it contains some fibre which is good for digestion and complements potatoes in this meal which offers none but is a good source of carbohydrate. Carrots are vegetables and helps with good vision for your baby.
Serve this to baby from 6 months upwards.
Potato Plantain and Carrot Puree Recipe
Ingredients:
- ½ medium ripe plantain
- 1 medium irish potato
- 1 carrot
- 2-4 tbsps of flaked fish (get recipe here)
- Water
Method:
- Wash plantain and potato and cut into about four pieces each. I prefer to leave the backs on to retain more nutrients after cooking.
- Cut carrot into two or three chunks too and place all into a cooking pot. Add about a cup of water and cook for 15 – 20 minutes to soften. Drain off the water into a bowl.
- Peel of the back of the plantain and potato, then put them with the carrots in a blender, add some water and puree to a smooth consistency or leave some chunks if it is for older babies.
- Pour in a bowl, mix in the flaked fish and serve.

Sure you can use milk but I feel it is not really necessary.
