This beef curry stew is so easy to make and will make a difference from the regular tomato stew. Meat is one rich source of protein that many kids love to eat and cutting it into tiny bits or chunks as a sauce will possibly attract the fussy meat lover. The beef curry stew is also filled with vegetables and therefore an all-in-one stew that will encourage kids to eat their veggies. It is quite suitable for toddlers from 1 year as it will help them develop a better chewing coordination, as well as improve their biting and chewing skills as they grow older.
You can substitute beef with chicken chunks or even liver, whatever is available to you, as i always say ‘the recipe is just a guide and you can twist to your own convenience.’ Being a curry stew, some curry leaves would also give it a wonderful aroma. I was not able to get curry leaf but if you can get it, i bet you the taste and aroma will be worth it.
Beef Curry Stew Recipe
Ingredients:
- 250g of beef (cut into small chunks)
- 1 large onion (chopped)
- 1 bell pepper of any colour
- 1 large carrot (cut into cubes)
- 2 cloves garlic (crushed)
- A small chunk ginger (crushed)
- 2 tbsps curry powder
- 1 small tin tomato (about 2 tbsps)
- 1 seasoning cube
- 1-2 cups water
- 1 tbsp cornflour (optional)
- Pepper to taste
Method:
- Pre-season cut chunks of beef with one garlic, some ginger, seasoning cube and a quarter onions. Allow to marinate for at least 30 minutes.
- Put a pot on low heat and brown the beef. Add the onions and allow to cook with the beef for about 2 minutes.
- Add the chopped bell pepper, carrot, garlic and ginger and keep stirring to avoid it burning. Pour in one cup of water together with the tomato puree and the remaining seasonings, stir and allow to cook on medium heat for 30-45 minutes till the meat is soft. Keep adding the remaining water if the sauce is going down and check for taste.
- Once cooked, if the sauce is watery, dissolve cornflour with a teaspoon of water and add. Simmer and remove from heat.
- Serve with rice.

Hello, as you said he eats in small quantity, then keep giving him that and remember their stomach is not as big as ours. So long as you have checked with your doctor and he’s okay medically, there are lots of food to choose from rice, potatoes, yam, pasta, couscous, fish, egg etc. You can mash them up a bit to help him eat it. Also try allowing him feed himself by giving him soft cooked foods, akara, moimoi, fried egg, boiled yam and more to hold. It is a gradual process and you need to patiently do it.
